Tacos are always a hit!
Monkey and I make homemade pizza with a whole grain crust. That is a really easy one.

A little tougher but still good would be chicken and spinach quesadillas.

Pigs in a blanket with cresant rolls are easy and classic. Or you can use ham and cheese instead.

You could do mini quiches... Ham and Cheese or turkey and mushroom or spinach...

Sausage balls! I love those!

Kabobs are great for a complete meal.

I have some recipes if you need them.
Have fun. It sounds like a great idea!

Oh yeah babe!! We totally do this too. We used to get the hard taco mix, but no one ever ate the hard tacos, so we switched to soft taco night. Thanks for the tip!!

One of the things that everyone seems to love in our house is Taco Night. The only utencils on the table are for loading up your taco.

Everyone gets involved with the taco fixin's, like shredded cheese, salsa, sour cream, beans, guacamole, etc. The older kids can help cut up tomatoes and things like that, and the younger ones can put serving bowls, paper plates, and napkins on the table. We get hard shell tacos and soft-shell. Everyone gets to choose exactly what they want on their taco (starting with what kind), and make it themselves.

Then we rip into those babies with our hands. It's always a hit with both the adults and the kids.

You could follow it up with a dessert you eat with your hands, too.
